- Dried Apricots: Dried apricots provide potassium, an essential mineral that supports normal muscle function, nerve signaling and fluid balance.

Ingredients
- 1 cup roasted sunflower seeds, unsalted
- 1 1/2 cup raw pumpkin seeds (pepitas)
- 2 1/4 tsp. pumpkin pie spice
- 1/4 tsp. Kosher salt
- 1/3 cup, 2 tsp. pure maple syrup
- 1/2 cup dried apricots
- 1/3 cup golden raisins
- 1/2 cup dried cherries
- 3 oz. Butterscotch chips
- Cooking spray
Instructions
- Preheat the oven to 350 degrees.
- In a small saucepan, heat maple syrup, pumpkin pie spice, and salt. Bring to a low simmer. Stir in pumpkin seeds and sunflower seeds, then reduce until almost all the maple syrup adheres to the nuts and seeds.
- Coat a parchment-lined sheet with cooking spray.
- Layer the seed/maple mixture on the prepared pan. Bake in the oven, stirring every 10 minutes, until all the seeds are toasted and golden brown. This should take about 15-20 minutes.
- Allow the seeds to cool completely. The mixture will harden as it sits.
- While the seed mixture cools, cut the dried apricots in half.
- Once at room temperature, break the seed into small clusters. Add the clusters into a large bowl, and mix together with apricots, cherries, golden raisins, and butterscotch chips.
